Aloo Drumsticks curry

Enjoy a simple and flavoursome Aloo Drumsticks curry.
• 2 long Drumstick wash & cut into 2” pieces
• 3-4 Potatoes chopped
• 1 Onion medium chopped
• 2 Tomatoes small to medium
• 1 tsp Ginger
• 1 tsp Garlic
• ½ tsp Cumin seeds
• 2 tsp Mustard seeds powdered
• ½ tsp Turmeric powder
• ½ tsp Red chilli powder
• 2 Green chili (as per taste)
• 1 tsp Coriander powder
• Coriander leaves for garnish
• 3 tbsp Cooking oil
• Salt to taste

• Grind onion, tomatoes, ginger, garlic and green chilli & keep it aside
• Take a heavy base pan, heat 2 tbsp oil and fry the potatoes for 3-4minutes
• Now add drumstick and fry for another 3 minutes on medium flame
• Remove the fried vegetables into a bowl
• In the same pan add remaining oil and when hot add cumin seeds.
• Add the above masala paste and mix well. Fry until you see small droplets of oil separating from the mixture
• Add fried vegetables, turmeric, mustard powder, red chilli powder, coriander powder and salt. Mix well
• Add a glass of water and cook covered for 8-10 minutes on low flame
• Remove from heat when done
• Garnish with coriander leaves & serve hot with steam rice
