1 Onion chopped
4 Green chillies chopped
500gm Potatoes cut into 1/4″ size
1 Cauliflower cut into 1″ size
250og Green Peas
½ tsp Turmeric powder
Coriander for garnish
Curry leaves- few
1/2 tsp ginger garlic paste
For seasoning: 2 tbsp chana dal, ½ tsp jeera and ¼ tsp mustard seeds & 1 red chilli
Garam masala – blend these spices – 4 tbl spoons of Coriander seeds, 4 cloves, 4 cardamom, 1” cinnamon stick and 2 red chillies
6 tbsp Oil
Heat oil in a heavy bottomed pan. When it is hot add the seasoning. As it starts crackling add curry leaves, onion and green chilli and mix. When onion turns golden brown add ginger garlic paste and fry till the raw smell goes away.
Add potato pieces and stir for 2 minutes followed by cauliflower. Now add turmeric powder and mix covering the lid for 5minutes on medium. Remove lid, add frozen peas, garam masala powder and mix well. Cook on low flame for 10-15 minutes with lid on and stir occasionally. Switch off the stove when done and garnish with coriander leaves. Serve with steamed rice or roti.
