Entice your taste buds with the wonderful flavours of sweet and tangy Apple Chatney.
2 Granny apples (peeled, cored and sliced)
2 tbsp apple cider vinegar or vinegar
3 tbsp sugar
1 tbsp lime juice
½ tsp ginger grated
½ star anise
½ mustard seeds
½ tsp chilli flakes
curry leaves few
¼ cup water
1 tsp Oil
salt to taste
Heat oil in a heavy bottomed pan. When shimmering, add mustard seeds, curry leaves and mix.
Add chopped apples, sugar, ginger, cinnamon stick, star anise, apple cider vinegar and water.
Cook on low with lid on till the sugar caramelises and apples soften for about 20-25 min stirring occasionally.
Add raisins, chilli flakes, lime juice and salt, mix well. Cook uncovered for 5 more minutes or until a thick chutney remains.
Remove from flame. Serve hot or chilled.
