Try making this exquisitely delicate Cajun chicken this weekend; an easy recipe that tastes wonderful.
450gm boneless skinless chicken breasts cut into strips
2 tsp Cajun spice
2 tbsp lemon juice
Coarse salt and ground pepper
2 tsp Olive/vegetable oil
1 cup red or green prepared salsa
In a large bowl, mix chicken, cajum seasoning, lemon juice, salt pepper and oil. Refrigerate for 5-10min. Take a large non-stick skillet or grill and heat over medium. Cook chicken in 2 batches until cooked through and the crust is golden, flip 2-3 times. Transfer onto paper towel.
Serve Cajun chicken with salsa or sour cream.
