Enjoy a refreshing and colourful Carrot Pomegranate raita.
• ½ cup grated carrot
• 1 cup plain yoghurt/curd
• ¼ cup Pomegranate seeds
• 1 tablespoon ghee/ vegetable oil
• ½ teaspoon mustard seed
• ½ teaspoon cumin seed
• Green chilli finely chopped
• Black salt (kala namak)
• Coriander leaves chopped
To make the raita, put the yoghurt in a bowl. Stir in grated carrot, pomegranate seeds and green chilli and salt (reserve some pomegranate seeds for garnish).
Heat the ghee in a pan. Add the mustard seeds and cumin seeds, let it splutter. Remove from flame and carefully pour the hot content over the yoghurt mix.
Garnish with pomegranate seeds and coriander leaves. Serve chilled or at room temperature.
