This egg sandwich breakfast will keep you going strong until lunch. It offer great nutrients plus they’re fast and easy to make.
4 Boiled eggs (peeled)
1/5 cup Mayonnaise
Black pepper (ground)
25gms Fresh baby spinach
½ Grated carrot (optional)
6 slices Bread
Mash the peeled eggs in a bowl. Add mayonnaise, salt, pepper and grated carrot (optional). Mix and taste for seasoning.
Butter your bread. Spread 3 of the slices with the mix uniformly. Top with baby spinach and remaining bread slice.
