Enjoy a simple, healthy and refreshing vegan salad. If you are vegetarian, you may add Feta cheese if you wish. This salad goes well as a side dish, with toast or as a meal by itself.
• Preboiled or canned chickpeas (drained)
• 1 cucumber (diced)
• 2 tomatoes (diced)
• 1 big ripe avocado (diced)
• 1 red capsicum or carrot (diced)
• 1/2 cup baby spinach
• Few green olives
• 1 lemon juice
• 2 tablespoons extra virgin olive oil
• salt / pepper
Place all of the vegetables in a large bowl and mix. Toss in olive oil, lemon juice, salt and pepper. Serve.
