Try this easy to prepare stir fry noodles with delicious flavours and fresh crispy vegetables.
250gm egg noodles
1 bunch spring onions thinly sliced
1cup mushrooms thinly sliced
2 carrots chopped
1 cup broccoli chopped
½ cup capsicum chopped
3 cloves garlic finely chopped
2 inch ginger finely chopped
2 green chilli finely chopped
¼ cup coriander leaves
Roasted cashew nuts handful
2 tbsp soy sauce
1 tbsp fish sauce
1 tin (80 gm) shredded smoke chicken (optional)
2 tbsp vegetable oil
Salt to taste
In a large pot, cook the noodles according to packet instructions. Drain and rinse the noodles under cold water. Drain again and toss in ½ tbsp oil.
Heat the remaining oil in a wok. When hot add ginger, garlic and chilli; fry for a minute.
Add spring onions and capsicum, fry for another minute.
Add chicken, soy sauce and fish sauce and stir.
Add the noodles and ½ the coriander leaves.
Toss until well combined and heated through.
Remove from flame.
Garnish the noodle mixture with the remaining coriander leaves and roasted nuts.
