This nutritious and easy to make quinoa coconut bhaat is perfect for a quick meal
2 cups Quinoa
½ tsp Turmeric
½ tsp curry paste
1-2 cups mixed vegetables (fresh or frozen)
½ lemon juice
¾ cup fresh shredded coconut (or frozen)
1 tsp mustard seeds
½ tsp cumin seeds
Curry leaves few
1½ teaspoon oil/ghee
Take two cups of Quinoa and wash thoroughly with water. Keep quinoa in plenty of water for 5 minutes, mix and drain out the water.
In a separate pan, fry some mustard and cumin seeds, a few curry leaves, 1/2tea spoon of turmeric and curry paste.
Add 1-2 cups of mixed vegetables of your choice and which have been cut to small size (or use frozen mixed vegetables). Add about 3-4 cups of water and bring to boil.
Squeeze some lemon juice (about half cut lemon) and add salt to taste.
To this boiling vegetable and masala mix, add the washed and drained quinoa.
Add 1½ teaspoon of oil (or ghee).
Cook till quinoa is tender and vegetables and quinoa give a solid look. Leave it for 5 minutes to absorb any remaining water in the pan.
Add ¾ cup of shredded coconut (or use frozen). Serve with chutney or curry.
Optional: Add ¼ cup of rice along with quinoa as your preference.
