Ragi Java or breakfast drink

Ragi Java or breakfast drink is common in South India. Ragi or finger millet is gluten free grain and a good source of fibre. This nutritious grain helps control diabetes, cancer, osteoporosis and other maladies. I still remember in my childhood days in the country side, farmers eating Ambali or Ragi Java first thing in the morning. It was known as the poor man’s healthy breakfast due to the abundance of vitamins and minerals it contained.

1/2 cup Ragi flour
5 tbsp Yoghurt/Curd
750ml Water
½ tsp Green chilli thinly sliced
½ tsp Ginger thinly sliced
Curry leaves few
Garnish – mint leaves, almond flakes and crushed walnuts

Mix the Ragi flour with a little water to make a smooth paste and keep it aside.
Boil water and add a little salt, green chilli, ginger and curry leaves to it.
Slowly add the Ragi mix stirring continuously. Let it cook on low, stirring occasionally. When the mixture starts to boil, cook for about 5 minutes while stirring.
The end product will be a semi-thick concoction. Remove from flame and let it cool.
In a small bowl add yoghurt/curd beat it until smooth and add to the above.
Garnish with nuts and mint leaves.
