An easy to make recipe that tastes great. Season it generously if you like it spicy (chilli flakes).
Sweet potato 200gm (red) & potato 100gm (cooked)
1 Leek sliced
3 Green chilli chopped finely (as per taste)
1/3 cup milk (optional)
Salt & pepper
Oil/butter for frying
1 Preheat oven to 180-200°C.
2 Heat the oil in a non-stick frying pan over a medium heat. Add the leek, green chilli and cook for 5 minute on medium. Stir in green onions along with a pinch of salt. Mix and stir occasionally for about 2-3minutes. Remove from flame & let it cool.
3 Meanwhile in a bowl beat the eggs, season & add milk plus half of your grated cheese. Keep aside.
4 Cut the potatoes & sweet potatoes (boiled) into slices of about ½cm thick. Evenly place them in a well-greased baking dish.
5 Layer the leek mixture on top of the potato slices. Pour the egg mixture. Sprinkle the remainder of the cheese evenly on top.
6 Place on a baking tray. Bake 35-45 minutes or until top is golden brown & bubbling.
