Khichdi a simple nutritious dish made from rice and dal. It’s a complete meal in itself.
¾ cup Basmati rice
¼ cup Urad dal/Black gram with skin (soak 2 hrs)
2 tbsp Ghee/butter
2 ½ cups water
Heeng/ Asafoetida pinch
Clean and wash rice and dal.
Boil water in a pan with air tight lid.
Add clove, heeng and salt to taste.
To this add rice and dal mix.
Bring to brisk boil and cover.
Simmer until almost all the water is absorbed and rice and dal are cooked.
Top with ghee and garnish with cashew nuts and raisins.
Serve with plain yogurt or raita.
